    Absolutely heavenly : Wow! This soup has a lot of texture and is not watery at all. I think it is probably a good idea to try to find lychees - they are in Asian sections of most supermarkets and are not quite as sweet or as soft as a pear. The crostini w feta is a great addition to the soup because it gives a really nice contrast of flavors. Also, I did not cool this soup in the fridge - just served right after making it to raves : Thank you again, Aarti!

    This is delicious. First time, I didn't have lychees, and not knowing what fruit was similar in taste, I used fresh, peeled plums. The end result was good. I found canned lychees in an Asian market and followed the recipe again and the end result was outstanding. Lychees lend a delicate sweetness to the recipe. Lychees and pears have a similar flavor and aroma. This is a very easy recipe and you don't need the feta crostini to enjoy it.

    LOVED IT! I actually couldn't find lychees so I used pear. I'm going to keep looking, though. And the crostinis were so easy and yummy.

    Absolutely delicious. My mother told me she couldnt find the lychees so she used a pear and said it turned out very good as well. So that might be something for those that cant get their hands on the lychees to think about using.

    This was delicious. I wasn't sure how the lycees would taste because I have never tried them before. I am glad I trusted the recipe and tried it! My whole family loved this refreshing soup

    I didn't use the Lychees as I don't know what they are and I'm not really interested in trying them. I think the gazpacho was good. Next time I probably won't use as much cilantro

    wow this is great Aarti! I like the complex blend of flavors and refreshing cooling element the cucumbers add to the soup. I had no idea how lychees tasted but they do add a very subtle kind of floral flavor that was a nice surprise. a new staple for summer - thank you!

    This recipe is amazing! I don't like tomato based gazpacho either and this is a great alternative. It is so refreshing on a warm day like today. I never had lychee before and was afraid it would make it too sweet, but it just adds a light perfume to the soup. The main flavor is the cucumber and it satisfies if you like creamy flavors. The only change I made was to use parsley instead of cilantro. I also didn't make the crostini and the soup stands on its own no problem.

    I was watching this episode where she made this gazpacho and while she was checking for seasonings in the blender she kind of tasted it with a spoon. And after the doing that she dipped back the spoon into the whole batch of gazpacho in the blender which was supposed to feed her friends later....hmmm i have never seen anyother chef do that on food network. Kind of off putting :-(
