Flavorless! And the texture was awful. Very disappointing. The one star is for the crustini. No surprise there.

Refreshing! The texture of the gazpacho is a bit chunky from the almonds (but I used slivered almonds and that may be why, which gave it a nice "bite". Great for a summer meal. Lychees did not make it overly sweet, just gave it added level of flavor. The crustini: to die for!

This was wonderful. We were concerned the lychees would make the gazpacho sweet but that was not the case at all they just game it a fresh flavor. Will definitely make this again.

Delicious and easy. A great summertime treat, and healthy. Watching the episode, it wasn't a stretch to imagine what this would taste like. I wouldn't have made it otherwise.

I so enjoy a cold soup during the warm, summer months. LOVED the flavor of this soup with the lychees providing subtle flavor and sweetness. It was SO easy to make - done in about 5 minutes. I didn't serve the crostini with it (just didn't need it or the carbs and it was fine. I sprinkled the top with just a few of the toasted almonds and a sprig of mint. Looked lovely. Tasted great. My husband raved about it. Thanks, Aarti!

I made every dish from this episode last night! We loved the gazpacho. I served it in chilled bowls and the salty feta and crostini paired perfectly. It was a refreshing summer dish and very satisfying.

I thought this was really different and refreshing. Thanks so much for the suggestion of pears, Trader Joes was out of lychee and I would have had no idea what to substitute. My kids didn't love it but that's ok, more for me : Love you Aarti so glad you are back!!

I was out of Lychee's and couldn't get them at our local store's.
So I used canned pears(rinse like you would the lychee instead. They worked great as a replacement. So if you do not have they lychee try the pears. Will be make this more often as the summer goe's on. Thanks Aarti for a great recipe.

I am not usually fond of gazpacho but the yogurt base instead of tomoto base tempted me to try it. It was very easy to make and my husband and I loved it. I made more crostinis than Aarti and we ate it mostly like a dip. This recipe also went very well with the other dishes in this episode.
