This was the first time I watched Aarti's show and was anxious to try her recipes. I made two of the three; the tabbouleh (great! and the eggplant. I didn't have either dates or prunes so I subbed raisins. I also didn't press the cheese through the sieve (I'm a lazy cook but the results were wonderful. A delightful vegetarian dish. Will definitely make again.

Just made this - used Mexican tarragon instead of mint, and almonds. Really yummy.

I just signed in to get this recipe. It looks fabulous. I am in agreement that the music was very annoying and almost made me forget the whole thing. Anyway I am glad that I didn't- but have to hope that the station looks at these comments and takes heed.

I made the entire menu for my family and it was all wonderful, but the eggplant rolls were by far the biggest hit! I added an extra date as well, but thought pushing the ricotta through the sieve was well worth it. I also grilled some pita for the extra ricotta filling since my 9-year-old is not quite at the grilled eggplant happy place and it made a perfect spread. Great summer flavors.

As soon as I saw Aarti demonstrate this recipe I knew I had to try it. I went right down to the farm stand and picked up some eggplants. I can't eat dairy so I substituted tofu ricotta in this recipe. I used roasted garlic instead of raw and added an extra date. So simple to make and super tasty. I will definitely be making this again.

I plan on making the eggplant dish in the future! One thing I totally agree with re: the comments/review already posted - whoever does the sound track really got it wrong this week. The music was on full blast over Aarti's voice. Totally annoying and such a shame because she is really fun to listen to - she doesn't need music blasting as she works, but if you insist - a half dozen turns of the knob DOWN would be nice.
Can't wait to try so many of her recipes!

Made this tonight. Pushing the ricotta through the sieve is a pain, and seemingly unnecessary. Next time I'm going to skip that step. The filling is delicious! This was a very interesting dish. I'm already scheming how it can be translated into a crostini, or an eggplant lasagna-ish dish, as well.

I would like to comment on Foodnetwork and the "loud" music in which they play during the shows segment. The music overpowers Arti's voice that it becomes so annoying to listen to. Please quiet the music so her lovely voice can shine through and we the listeners can hear what she is saying. Thank you! Otherwise, keep up the great job Arti as I love your recipes :-
