I adapted this to eliminate the cow's milk and butter, and it still tasted fabulous! I used unsweetened almond milk instead of the milk, and I sprayed the pan with coconut oil instead of using butter. Also, as I did not have any dried figs in the house, I used a combination of prunes and candied ginger. The recipe was delicious and everyone loved it!

I have tried several of Aarti's recipes and love them all! This bread pudding was a "WOW!" with the family tonight. I added a little coconut rum to the mix and it was so good. Substituted raisins for the figs. Will definitely make again! This was like a "chai latte" bread pudding with a coconut twist. The smell was fabulous as it baked.

Wow, even ancient hot dog buns I found in the back of the fridge and mixed in with my baguette tasted delish in this! Aarti - I can't tell you how thrilled I am to have this chance to be bringing Indian flavors to my cooking - you are a dream come true! My whole family looks forward to Aarti Party Night! Congrats! He is great!

    Hi Aarti,
I watched your show today and found it very enjoyable. Rushed out and bought the ingredients for your bread pudding. I used dates instead of figs (yum!!! but even though I really liked it, I did something wrong. I ended up baking it for 45 minutes, the top was brown and it was pulling away from the sides. However, it was still a bit soggy. Did I not use enough bread or maybe the wrong kind? I used about 3/4 loaf Italian Bread-true I eyeballed it for 7 cups. I love bread pudding and this is the first I ever wanted to make but I want to get a better texture next time. Any suggestions?

I've been a food network viewer for over 5 years. I've often noticed dishes I wanted to try and have made quite a few. What I've never done before though, is watch a show, drop everything to go get the ingredients, and make it as soon as I get back from the store. That is exactly what I did with this recipe however. I have to say, it was worth the effort. The texture and flavor was spot on; one of the best bread puddings I've ever had. If you're trying this recipe, don't let the spices worry you; the final flavor is wonderful and very subtle. Thank you Aarti, for this keeper of a recipe!

While I haven't tried this, I'm looking forward to making this in the next few days! I love cooking and baking with coconut milk, so I'm always looking for new recipes with this ingredient. I also appreciate your various uses for cardamom. I bought some of this spice a while ago to use in a particular cake recipe, but haven't found much else to use it in. You've given me a couple of ideas in this one show alone! Thanks so much Aarti! You're a gem! God bless you!

I won a free bag of groceries from a local market. It had a can of coconut milk. I had not idea what to do with it. Today is my birthday, so I am going to spoil myself! I will be making your bread pudding, and your "Ain't Chicken" dish and potatoes. You are a ray of sunshine on my birthday. Thank you, Aarti!

    Hi Aaarti,
This recipe looked so declious, water came to my mouth. Personally, I am not big fan of bread pudding, but I am going to try it. I like the spice mixture and figs, but was wondering can anything else be subsituted for eggs, because I do not eat eggs. Any suggestions anyone.
