    We didn't have any figs so we used shredded coconut inside and as a topping. We baked it longer...about an hour...and loved the results. We also ate it with vanilla and coconut ice cream..delicious!

    Fantastic recipe! The combination of spices, cashews and the coconut milk puts this in a class by itself. I have made many bread puddings, but this is my favorite.

    My husband's favorite dessert is bread pudding or as he calls it bread and butter pudding(from the UK originally and he absolutely loved this. I switched out the fig for raisin and omitted the ginger(added a little extra cinnamon & cardamom and used challah bread it was still really delicious.I will definitely make this again and again.

    My family loved this! I took advice from other reviews and tweaked the recipe a bit...I only used 2 1/2 cups of milk, and I doubled the amount of spices. I also used peaches instead of figs and it was yummy! Will definitely be making this again!
