Every Friday night is Family Fun Night at our house! This Friday, my 3 boys (8,6,3 and I threw this dessert together right before dinner. The only variant was that we substituted 1/2 cup of chocolate chips for the figs. My husband was so excited when he came in and smelled what was cooking! Everybody LOVED it. We will most certainly make this again.

This bread pudding is ABSOLUTELY delicious. The coconut milk must be the secret ingredient because I used 1% milk and it still came out rich and delicious. Yum!!!

I always try to follow the recipe exactly the first time through just to understand the creator's taste. However, with fig trees in the yard loaded with ripe figs, I had to substitute these. Much better than the traditional raisins! The addition of cardamom and coconut milk really give it that Indian desert scent and taste that make this far better than a traditional (bland pudding.
Next step is to figure out how to get that cup of sugar out of it.

Terrific combination of flavors. I usually do not cook with coconut and cardamon. My family loved it. My son did not think he would like bread pudding until he tried it. Everyone loved it!

This is the first of Aarti's recipes that I have attempted. It was so easy, smelled amazing while it was cooking, and tastes SO good! An overall A+! Aarti rocks!

The fact that it wasn't the dense, heavy dessert bread pudding usually is brought out all the wonderful flavors of this recipe. Using figs instead of the typical raisins was a wonderful addition as well. It wasn't overly sweet, yet rich enough to become a new fave comfort food for me. It was easy to make and assemble...again, unlike most bread pudding recipes. Can't wait till tomorrow when I can have another piece.
