    I gave some to a friend who texted me to say she was eating it cold because she was too anxious to wait to heat it up. She loved it & so do I. Next time will add more red pepper flakes because I'm a heat monster. Thx for another awesome recipe. As a matter of fact everything that I've made has been great.

    Beyond delicious. I wasn't sure the ingredients sounded appealing, but based on the glowing reviews, I decided to cook this. I'm so glad I did! The first time, I used yellow split peas - soaking for 30 mins before cooking. The total cooking time ended up being a bit longer than the recipe - 35 to 40 mins. Later, I found mung dal at a health food store, and cooked as directed. The mung dal has a bit nicer texture - it's smaller than split peas, about the same size as your shredded coconut, and cooks up softer. But split peas are a fine substitution if that's all your grocery store carries. Also used fresh coconut instead of sweetened dried coconut. Hope to find unsweetened dried coconut somewhere, since it's a bit of a production to scoop out and shred the fresh coconut.

    All in all - a ridiculously good dish!

    FANTASTIC! My husband doesn't even like squash, but loved every bite (even came back for 3rds. I followed the recipe exactly except for the coconut (used sweetened, to make it more appealing to the kids and half of the red pepper. Amazing!! I'm a huge fan of Aarti and this recipe will be a staple in our house for years to come. I can't wait to share at my next gathering.

    YOU GUYS! This soup was amazing! I don't even like butternut squash so I was apprehensive, but I trust Aarti and didn't remove or substitute it and it came out just fantastic. The flavours in this soup are just so pronounced: the coconut, the spices, the lime, but it all works so well together and the squash just soaks it up. I haven't stopped raving about it since we made it, and I'm already planning on serving it for a dinner party we're having next weekend. Highly recommended!

    This was SO good!!! The flavors were very well balanced! A hint of sweetness and a bit of heat. I would have liked to have added more red pepper - will definitely do so next time.
