    I love this recipe. Have made it twice and can't wait to make it again now that I have found pigeon peas.One of the things I like best about this recipe is you don't puree the squash and I love the texture the cubed squash adds. I also love the level of spice (heat. Here's a few tips, cut back on the coconut a bit if you only have the sweetened. Also, the recipe doesn't specify the cilantro (I use parsley is for garnish only. My first batch I added dried cilantro and parsley which measurements are very different and added while cooking. Yikes. I have started to pair this with a salad and some garlic naan bread which makes for a great vegetarian night! Thanks, Aarti!

    Easy and SO delicious. I'm not a lover of butternut squash but it looked so good on the show that I decided to try it. It's becoming a weekly dish in our house.
    And I just LOVE Aarti (and she didn't pay me to say that!

    Hello Aarti,
    My wife and I are from India. She is trictly vegetarian (not vegan and has many dieatary restriction due to earlier ailment. No onion, garlic or peppers so I always look for what we call "satvik" recipes. This one looked promising so I made a couple of changes by omitting garlic and pepper flakes. Also reduced coconut and substituted broth with water. She absolutely loved it and so did I. Who says you need heat for food to be delicious. So far I have tried 3 recipes from you and they have all been great. Have been sharing with all of my friends and colleagues. "Keep 'em coming!"

    Thank you, Aarti, for this recipe that I will make again and again! So delicious and different. Even my mom who doesn't like anything spicy or exotic (and "doesn't like" Indian food loved it! One suggestion for other who want to try...I could only find unsweetened coconut in flakes, not shredded. It was a bit much to chew...next time I would throw it in food processor to shred first. Keep it up - love your show and so many of your recipes!

    This recipe is a WINNER! I made it for the first time for my out of town guests today, and it was a hit! Even my husband (who is a picky eater loved this dish! The flavors were so sophisticated, the spice mix was excellent... and yet it was so easy to prepare!! I will certainly be making this dish again. Thanks Aarti, absolutely love your show!

    My husband said this is the best soup I have ever made. It was easy and delicious. I substituted yellow split peas for the yellow split pigeon peas, which maybe is the same thing, not sure.

    I absolutely loved this recipe and how easy it was to make. I made it twice and did the following revisions, based on my own taste preferences. I substituted green lentils for the yellow split pigeon peas, left out the coconut, and added a drained can of fire roasted diced tomatoes with green chilies. OUTRAGEOUS with the revisions !!! You rock Aarti !!!

    I made the entire meal from the veggie day episode. It was quick and everything was delicious! The whole family loved it--carnivores and children alike. This soup was by far the star of the meal--absolutely delightful! It has a nutty flavor that combines with the lime and honey in a wonderful way. Natural food stores are the place to find unsweetened coconut if you're having difficulty finding it. Thank you for the wonderful recipe!
