To make this salad even easier than it already is, after massaging the kale, you can simply drizzle on additional olive oil, the honey and the additional lemon juice and toss well. No need to make a "dressing" in another bowl. I added small ripe avocado chunks along with the diced mango and used toasted pine nuts because I didn't have pepitas. This is a delicious salad that lends itself to all sorts of tweaks. It is also a great make-ahead salad for entertaining or bringing to a dinner party.

Made this for my mom, who is skeptical of any non-dessert course with honey in it. Rave reviews all around. Used apple and a few chopped raisins in lieu of mango, because I had it. Made it last time with mandarin oranges. Both were seriously good. Perhaps the best part was that we were able to eat the left overs the next day with lunch---still fresh and delicious, thanks to the sturdy resilience of the kale. Best make-ahead dressed salad ever.

AWESOME! another one of aarti's recipes that have become a weekly staple in our home. i've switched it up a bit using watermelon or mandarin orange segments instead of mango... any sweet fruit works!

Like so many, I had not tried kale. WOW--what a nice surprise. Husband and I loved it and
have made it a few times now. I use the nuts I have on hand and vary the fruit, too.
Thanks, Aarti--Keep 'em coming--Donna in SOCAL.

This is a great salad!! My daughter made it and I was a little leary about it but I tried it and it was wonderful. We used roasted pine nuts and they were very tasty. I could eat it everyday. Thanks for the great recipe.

We grow kale in our garden, and it has been such a great producer this year. This recipe is such a great way to use it! My grocery store didn't have pepitas, so I made it with sliced almonds instead. I also didn't add any extra dressing after. I just mixed in the honey initially. Absolutely delicious! Because kale is such a hearty green, any extra keeps well and is great for lunch the next day.

R U kidding me??? I have been cooking every night for many years, like 30. Recipe is poorly written, as in no specifics as to how much lemon or pepper. Lemons yield various amounts of juice. Standard would be oil with 1/3 amount of acid. Regardless, this was not worth putting into the rotation. We are throwing it out, NO, I will see IF it is any better tomorrow. HIGHLY over rated
