    This was very delicious. I didnt have pine nuts and it definitely needed the crunch factor. I had some sliced almonds so I used them. The carmelized lemons are a wonderful touch. I think that was the best part. Will make this again!

    It was okay. A little bitter for me, but I will try it again. The next time though, I will add more lemon juice, and a little less cumin and ginger. I loved the carrots and the roasted lemons though.

    I made this for my one year old son, so I actually cooked the carrots in the caramelized lemon oil. I also added honey to the lemon oil to take some of the bitterness out. Delicious! Made the dressing for myself but honestly preferred the carrots without the dressing.

    This was a really delicious recipe. I used a Meyer lemon since it's a bit less tart and has much thinner skin than a normal lemon. Also, after reading other comments about the lemon oil being sort of bitter, I used freshly squeezed lemon juice instead of the lemon oil to add extra acid at the end. This worked really well! I added some golden raisins, which may have made the salad a little sweeter than intended but was really tasty. Made the perfect side dish to Butter Chicken!
