I just made this paneer, and it's great. I made paneer several times before, but I never compressed it, I just let it hand and drain in the cheesecloth, and it would look like a half-dome. I really love the compressing tip. It's so much easier to cut and use. Beautiful! Thank you, Aarti!

Awesome recipe! I've made this twice, and it's come out perfectly each time. Couldn't be any easier to make! I used mine in making a Paneer Tikka Masala... so good! Next time instead of compressing the cheese, I may take Aarti's advice and try eating it soft, with a little honey and walnuts... sounds divine! Edited to add that instead of cheesecloth, I now use muslin, which I always have since I'm a quilter. I just make sure it's been washed and dried so it's clean.

Super easy and so good! Even if you don't cook with paneer that often, you can skip the last step and use as a ricotta-like cheese - spread over toast and sprinkle with a bit of coarse salt and pepper, or try with honey and walnuts. Delish!

A very good recipe for paneer!!!! For those of you wondering what to do with they whey - DON'T THROW IT OUT!!! Contrary to what one might think, the whey is very high in protein. Whey can be added to soups and stocks. I freeze it in ice cube trays when I want to add a little liquid to sauces. I also freeze it in 2-cup volumes in heavy-duty zip-lock bags, and use it in place of liquid in bread.

I really like this. As for as the pricy cheese cloth. I just put mine into a regular wire strainer and keep pressing down.Let it sit a while and press some more. This method works great.
