    I watch Aarti make this and decided to make it last night. I seasoned my milk with some cumin, coriander, smoked paprika and salt before I separated the whey so my cheese has a spiced flavor. I just tasted it this morning and it is delicious. The cheese is creamy and the background note of the spices add to the flavor. I am going to make a wrap today for lunch using my cheese. I can see using this recipe as a base for many different flavors; italian herbs, mexican spices, sweet flavors etc. Alton Brown used a similar recipe to make cottage cheese, which is also very delicious and several of the chefs have made ricotta the same way. Try it.

    @tarabranham: The first shock I've experienced watching Aarti--when she poured all that lovely whey down the sink. You can use whey really any way that you might use buttermilk. I've written all about it on my blog, Zesting the Pith at Wordpress. Lately I've also seen it in drinks at the farmer's market, but haven't attempted those. Don't throw out your whey!!!

    Otherwise, Aarti is great & this recipe totally works.

    Aarti, Thank you for a wonderful receipe! When I saw the show, I could not wait to try to make it, it looked so simple....and it was! It is delicious!! The hint of lemon is very refreshing, and I think it would be great topped on a salad - kind of like feta cheese.

    The next recipe I make, I will try it in one of your traditional dishes as it also looked delicious! Thank you again!!

    Very yummy and easy to make, my kids could easily help with this and learn something about science. I'm going to make the "fingers" to go with matzo ball soup tonight!

    I didn't have much luck with this one but I was able to use the cheese...I think I didn't turn down the heat fast enough so the curdles were so small I wasnt able to get it to firm up very well and the lemon taste didnt come out as well as well as I would have liked...we used it in the Saag Paneer...although it didn't remain solid like I would have liked it to, but the overall dish tasted very good!

    I absolutely love Paneer Cheese, Honestly, I never knew where to get it. Now I don't have to worry at all!!! I just made the cheese - AMAZING - and I can't wait to taste it and cook with it. This will be a staple in my kitchen because I am on my way to being a full-fledged vegetarian! Thank you Aarti!

    P.S. The only reason I didn't give it 5 stars is because I haven't tasted it yet.

    I did not make Aarti's recipe but I have made paneer before (I used white vinegar instead of lemon juice so I wanted to chime in here and let you know that yes... it really is as easy as she made it look in this episode and it really does cook up the way she shows. Be aware though that paneer itself is very bland. It really needs to be mixed into another dish or have something coating it to make it flavorful.

    This is a very delicious recipe. When the recipe is done you can add seasoning to the whey right before it is ready for the cheese cloth and it is great for crackers. We also put sugar into the whey and ate it with jam on toast. I didn't know it was so easy to make. There are many different ways that you can make this recipe. Thanks Aarti for such a great recipe.
