    Excellent and easy! Used parsley, because I didn't have cilantro. Added fresh garlic and some red onion to the mix. Quick and easy snack too!

    This is so easy & delicious! I added some chives from the garden since they were plentiful, and kept playing with the balance of vinegar & salt. Mmmm. We finished the whole thing! Once again, Aarti, you did it!

    QUICK is right! I have so many cukes, I can't give them away to anymore people I know nor eat them fast enough. If I could freeze cukes, I would, but you can't...so this recipe allowed me to zip thru the slicing of many cukes(used blade on food processor and adding the few simple ingredients in the right proportions. I added parsley, no cilantro on hand, and I think mint would work nicely too. A guilt-free side dish too.

    Simple & speedy. I added tomatoes too. Next time I'll add some red onion also. I recommend eating it within an hour of making it, or it gets too soggy.

    Added zucchini because the garden was bursting and served on top of grilled brats with a creamy mustard sauce, my family thinks I'm a hero! TY Aarti!

    Love cucumbers this way. Easy, fast, healthy weeknight side dish. Just make the cumbers first and they are nicely marinated by the time your meal is ready.
