    A bright, fresh counterpoint to earthy comfort foods. Deceptively simple...yet the flavor truly satisfies. I may try swapping cilantro for mint leaves next time 'round.

    This is a snap to make and is quite good. I will not use the cilantro agian, i thought it had too pronounced of a flavor for the cucumber.

    Actually, I have been making this exact cucumber salad all summer before Aarti came along with it. I am a big rice vinegar fan and use it in many recipes because of its sweet and less acidic flavor. My recommendations are to use seasoned rice vinegar, and add some sliced onion. I also add a touch of olive oil and some Penzey's Italian salad dressing base - It's a powder. If you have any powdered dressing base that would work well in this.

    Don't eat salad quite often because of the preparations involved. And ready made dressings don't work everyday. This is one awesome salad..... could be eaten with everyday meals !!!

    This will definitely be one of my "go-to" recipes. (Translation: I will make this more than once a month.

    I like this dish because there are few ingredients, the ingredients are cheap, it includes a veggie, only one dish is needed---and no heat required, and, most of all, it is DELICIOUS!

    My toddler and boyfriend both loved this, and I had no leftovers! I made it as a side dish to spaghetti and garlic bread. It was refreshing and a perfect compliment to the meal.

    RE: SEASONED RICE VINEGAR: I actually misread the recipe and used plain rice vinegar plus the sugar and other ingredients. Using plain rice vinegar was not sweet, and I added the sugar to taste. Perfecto~! Thanks, Aarti!!

    I almost always have this in my refrigerator--especially during the summer! I like dicing the cucumbers and adding diced onions. Best with barbeque and some steamed white rice!

    I love this recipe, such a simple side dish and you can certainly tweek it to your taste. I usually cut back a bit on the sugar and leave out the cilantro. I also like to add thinly sliced sweet onions also.
