Thank you so much for this recipe! Today at my restaurant we experimented with it and made a Baingan Bharta Pizza! Peanut butter alfredo sauce with cheddar and mozzarella, roasted eggplant, caramelized balsamic purple onions, roasted chiles, garlic, olives & cumin. And it's GOOD. I know it's not what you had in mind, but I thought you'd like to know. Thank you!

This dish has wonderful flavor. Takes a little time to make, but easy. I used a little less yogurt, but it would be good with more or less. I didn't think it was an attractive dish, but who cares when it tastes this good. Thanks, Aarti, you're the real deal.

Fantastic - it goes quickly though, so make a double recipe! It goes wonderfully with the lentils - both are staples for us.

I have made this twice, both times with the lentil dish on the same episode. It is so full of flavor, so creamy and easy to make. A big hit with the whole family! Yum!!

Wonderful flavors. I think my eggplants were slightly smaller than called for in the recipe, so I should have cut back a bit on the salt.

I don't even like eggplant. Neither do my husband or my son. But we all LOVE this! Love it so much that I've made it twice and am making it again today to bring to a vegetarian potluck tomorrow. Many thanks Aarti!

I've made this twice already. It's the only receipe that I have had success with eggplants. I left out the peppers and cilantro because I didn't have them. Added 1/4 tsp chili powder and plenty of salt along with the tumeric and cumin. I also used regular yogurt instead of greek because I was out. The flavors were so good. I didn't have enough left over to store in a container!
