Easy recipe and went super with the lentil recipe from your show. Didn't have Greek yogurt on-hand, so I used a couple of dolups of sour cream per serving (let each person put in their own desired amount and it was fantastic! I've never roasted eggplant and now I'm hooked on eggplant. I loved this recipe...it's going in my fav recipe binder!

This is one simple and great recipe. My husband and I loved it. My picky 13 years old son who eats next to no vegetables gave it a thumbs up. Love, love , love the flavors of the roasted eggplant, carmelized onions, spices and yogurt.

I am a carnivore. I like meat ... BUT this was amazingly good. Halved the amount of yoghurt, and dropped the Serrano. Wife had her wisdom teeth out, and serving this over mashed potato was great. I might have made it for a convalescent, but will be making it far more frequently. Would pair beautifully with a grilled steak.

This was delish, made it the other night and loved, loved, loved it! Was craving it again last night but out of eggplant, so I used roasted butternut squash instead. OMG amazing. Thank you!

This was delicious - so flavorful, and smooth but with texture. I added minced ginger in with the minced garlic. My husband, who doesn't like vegetable, had a big second helping - next time I will make a larger batch. I served it with Aarti's Meatball Curry - what a great meal!
