    This was delicious - so flavorful, and smooth but with texture. I added minced ginger in with the minced garlic. My husband, who doesn't like vegetable, had a big second helping - next time I will make a larger batch. I served it with Aarti's Meatball Curry - what a great meal!

    This is awesome! I served it with warm pita (wish I had naan. I love it so much more than baba ganoush! Definitely a keeper!

    This was a great recipe! I am usually not a fan of eggplant but decided to try this out. I followed the recipe exactly and it came out great. The only change I made was plain nonfat yogurt instead of Greek yogurt. Very creamy, it can be used as a dip or eaten with some pita bread.

    AMAZING! And even better the second day. I had to roast my huge eggplants for about an hour but you can tell when they are roasted. I didn't use yoghurt because I knew I was going to reheat it. It's so easy and relatively hands off for an eggplant recipe. I know I'll make this over and over again. Thanks Aarti!

    This was my first time watching the show and cooking Indian food. I had several eggplants on hand from our CSA. I was looking for something different to do with them - what a treat this was. We love Greek Yogurt so added as she suggested. We had planned on steak tips for dinner and had them marinating in a coffee marinade. The eggplant, lentils, and citrus salad were amazing with the steak tips too! (really did not need the steak at all- the rest was so tasty Thanks so much!!!

    I watched the show, and Aarti baked the eggplant for 45 minutes, the turned them over and put them back in the oven for 20 or 25 minutes. dbella, did you bake yours for 45 minutes or 60 ? Recipes sounds wonderful and do plan to try it.

    Oh My Goodness...this is heaven! I happened to have all the ingredients on hand, so after watching the show, I had to try this recipe out. This is absolutely fabulous. And of course I used yogurt. It was simple and quick as well. I am not a tumeric fan so that was omitted. Great to eat with a spoon or some tortilla chips. Aarti, you did it again. Thanks :
