    This is an amazingly good dish. I wasn't familiar with fennel bulb, and from the smell of it I was even more skeptical. However, I made the dish just as directed and it was wonderful. All the veggies were mellowed out once baked, including the fennel. The cumin/coriander spice combo gave a definite "Indian" flavoring. For variety, those spices could be subbed out for anything of your choosing. Next time I might try a basil/garlic twist just for fun. Thanks, Aarti, for this easy healthy option over steaming up the same-old same-old vegetable side dish!!!

    This is very delicious. We try to eat alot vegetables and I look for tasty recipes. Normally, I don't like fennel, but Aarti said that roasting fennel mellows down the flavor and she was right!! It tastes good. Also easy to prepare.

    Super tasty and super easy! I can't believe how good it was. We put it over some brown rice which made for a very healthy dinner. It's a great recipe to make on a Sunday and then reheat for dinner during the week. Loved it!

    What a great dish! Packed with rustic flavor and oh so healthy. Next time I make it Ill use less lemon as it was a bit over powering. Cant wait to make some more the dishes featured on Aartri's show!

    Seriously - this dish was amazing. Using the lemons - genius! Actually - my sucky grocery store didn't have Fennel so I went with Turnips instead...it took a little longer to cook - but was worth the wait! Everyone loved this - my husband said it was the best turnips & carrots he'd ever eaten. Perfect on a winter's night! Thanks Aarti!!!

    I didn't have any fennel on hand so I left that out (didn't feel like going to the grocery store!. When this came out of the oven, my husband said it looked dried out but when we tasted it, it was awesome! The carrots were fantastic and the onions were so sweet. Definitely a fantastic way to spice up veggies. I know I'll be using this in the future!! I cut it down to a recipe for 2 people (I large carrot, 1/2 red onion, 1/2 lemon and it was fantastic.
