Amazeballs. I love curry. I love mac and cheese. This is a perfect blend of both. Super creamy and stick-to-your-tummy winter-time comfort meal. An easy to follow recipe, I used what cheese I had on hand - shredded mozz and sharp cheddar. I added a pinch of nutmeg to the roux. I had a tub of red curry paste from the local oriental market and just eyeballed the amount. Other than that - followed the recipe. This is my fav mac and cheese, I have crazy cravings for this dish! I served with roasted asparagus.

This was a yummy surprise for my family, who are use to plain old mac 'n' cheese.

great recipe! I used the cream and the mac and cheese was a little to thick for my liking.

another amazing dish by Aarti! The panko crumbs on top really make the dish - if you don't like curry - then this is still a great mac n cheese recipe - just leave out the curry.

Very tasty and easy. My suggestion to make it more amazing: replace the cream with half a 15oz can of coconut milk (or full can and top with fresh cilantro. For a more "Thai" taste you can combine finely chopped almonds into the panko. Give it a try you won't be disappointed.

this is an awesome recipe we tried tonight to beat the traditional mac 'n cheese doldrums... we added 1 tsp cayenne pepper, yum!

I'm totally in love with this recipe. It's certainly an occasional indulgence sort of food, but definitely worth it from time to time. Despite adding an entire jar of curry paste, it's not super spicy - I think the huge amounts of dairy in the recipe balance out the spiciness, leaving just the fantastic Thai curry flavor.

This recipe was really good! The best mac and cheese I have made. I used 4 cups of whole milk instead of 5 because I wanted to taste the curry more. I like things spicy!

I had some Thai Red Curry to use up so I thought I'd give this a try. I'm not sure I like the flavor in mac and cheese. At least my family gave it a try! Thanks for sharing...
