This is a good start. The flavors go well together but could definitely get kicked up a notch. Also I thought the consistency was a little gloppy. We enjoyed it very much though and cannot wait to try it again with some minor adjustments.

This is a level above plain old mac and cheese. The curry isn't too overpowering. My husband doesn't like curries but he loved this because it was just a hint of the curry!

Aarti's recipes are full of delicious spice and zest! If you are afraid of flavor and Indian-fusion, don't try her recipes. The dish had a very nice surprise that is definitely NOT normal mac n cheese! Not only that, but the ingredients are always rather affordable or in the pantry vs. buying ingredients you won't use daily. Never eat a bland and boring box of mac and cheese again. Unless....you really want to. :

True creamy mac & cheese, no bitter after taste or pasty feeling in your mouth like others. The Red Curry paste added an amazing twist that everyone who tired it like; even my friends who dislike Thai food had and 2nd helping!!
Next time im adding shredded chicken! Cant wait to make this again!

Loved it and so did my picky husband. A little complex at first, but after I made it the first time, the second time was a breeze. Thanks Aarti! You're recipes delight the senses and provide an entry to Indian cooking.

I only had about 1 TBS of curry paste but it was enough.
