    We love this salad. I had a little trouble finding celery root so it required planning ahead but it was well worth it. And the dressing, I don't have enough words to describe it. This was a huge hit in our house, like all of Aarti's recipes but it is a particular favorite of mine. I love salads and I could eat this one every day. Another huge winner.

    I make this salad at least 2 -3 times a week. It is our new favorite! I used celery root the first time and when I didn't have it on hand I added celery and green onions. this is the best, keep up the good work!

    Didn't get to make the full version of this recipe as I had a tough time finding celeriac root, but I got to say the dressing is the bomb. My husband ate an entire salad which is a feet in itself. Got to say, this is my new favorite go to dressing.

    I've made this recipe twice now with rave reviews! The pistachio dressing is AWESOME. I used 2 cloves of garlic (love it and it gives a nice "spice" without the Sriracha. Also, substituted the celery root with avocado for some buttery creaminess to offset the tart crunch of the apple. YUM!! I'm excited to try some other variations of this salad with the pistachio dressing!

    Other reviewers who found the balance of flavors off in the dressing were right. Having been alerted to this, I carefully tasted and adjusted the dressing before I used it. I felt as written, it lacked acid and sweetness. I added some agave nectar (but you could use sugar or honey, and rice vinegar (although more lemon would have also worked. Extra garlic seemed reasonable. I also added a lot of salt. Taste, adjust to your liking, and consider putting a little more of this dressing on than you would a vinagrette. The salad can handle it. My boyfriend and I thought this salad was the best part of the meal!

    I don't understand the few negative reviews -- they are just haters. The salad is delicious, and the dressing is a revelation! Who knew that nuts would make such a creamy dressing? Ok, I'll admit that I did the same thing that annoys me when I read these reviews -- I didn't have all the ingredients, so I just used what I had on hand....so I didn't REALLY make this recipe, but it was close enough for me to think the original would be just as great. I didn't have celeriac, so I just used spinach and a (Honeycrisp apple. For the dressing, I didn't have pistachios, so I used pepitas and raw cashews; safflower oil instead of canola, and Louisiana hot sauce instead of sriracha. DELICIOUS! I could eat the dressing all by itself! Love you, Aarti!!

    The recipe says to only use 2 cloves if you really like garlic. Well I do, so I did. EEK! WOW! That was some seriously garlicky dressing. Don't get me wrong, I liked it, however my kids couldn't touch it.
    BUT, I found another use for the leftover dressing. I spread it on naan the next day. The garlic seemed to mellow and the naan just shines with this yummy topping.

    Celeriac and apples are one of our favorite classic pairings of veggie and fruit salads. This salad with the addition of a riff on another classic - tahini dressing -by starting with pistachios was delightful. In particular the dressing was a "keeper". Very versatile (think as a slaw dressing or dip too. We've tried it a couple of times and we agree with the recipe's author where she mentions that a little extra lemon juice is a good thing. Also, we think, is just a squeeze of mild honey. The combo of rich nut flavor from the pistachios, salty from the added salt, hot from the srichha (sp, pungence from the garlic and sour from the lemon is all brought together in even a better way, we think, with the addition of just a touch of sweet honey. Also the second time we made this we tried a short cut of using pre roasted and salted pistachios (leaving the added salt out of the recipe of course. It was very good made that way too. Maybe not as "nutty-licious" for flavor as the "toast you own" version, but if you want to cut that corner, it worked for us. Overall a thumbs up recipe for the tasty updates on classic combos.
