    I could eat this everyday for the rest of my life. As stated, this dish is incredibly easy to make and the dressing works on all sorts of fresh veggies. I have thinly sliced Iceberg lettuce and julienned carrots (good crunch factor and coated them with this yummy dressing. I would recommend making some vermicelli noodles and a few slices of chicken or pork and you have a complete and scrumptious meal. DELICIOUS!!!

    This salad is delicious and very easy to make! I've made it at home and I also brought it to a couple of dinner parties and everyone always begs for the recipe. A vegetable peeler works fine for me.

    A big hit with everyone.I added the sauce just before serving and the charred peanuts were a perfect touch. The sauce was amazing and really made the salad. Can't wait to make this dish for my next dinner party. Thanks Aarti.

    The best! I couldn't make ribbons as my mandolin wouldn't cut the zuke. So I sliced it thinly and it was still lovely. Am off to the store to buy a new mandolin so I can enjoy the beauty that everyone else raved about. Will make this again and again, with or without the mandolin.

    this is a really easy, beautiful, delicious, healthy salad! What more can you ask? I didn't have a mandolin, so I used a sides-ways style vegetable peeler, and it worked great to make the ribbons. I put the ribbons in a bowl on top of the cut tomatoes the day before I took the salad to a potluck. Poured the dressing over immediately before we were going to eat, and sprinkled in the chopped peanuts. Everyone raved over the salad ~ the taste and how pretty the ribbons look! The bowl was scraped clean!

    I made this for a Bolly Bash party I attended this weekend, where every guest brings a Indian/Middle Eastern inspired dish. I was glad I waited to add the dressing after I arrived at the party. It 'wilted' the zucchini and made beautifully delicate 'ribbons', as the name of the recipe indicated. The roasted peanuts pushed it right over the top! So Good!! This was a huge hit, with everyone wanting the recipe. It has now been shared on Pinterest and Facebook. I'm excited about having too much zucchini this summer. I know what my solution will be.
