Had the extra turkey so said "what the heck... I will try it". Wow, nice surprise and am I glad I did! Having the turkey soak up the dressing makes the turkey very tender and juicy and works perfectly with the fresh crunchy veggies. Not only did my husband and I love it but my daughter (14 who is "so-so' with traditional chinese chicken salad couldn't get enough. I usually increase the dressing quantity amount but you really don't need to. It does not seem like enough but keep mixing and you will see that it is fine!

We tried this recipe at Thanksgiving and it is absolutely fantastic! It is fresh and light but the flavors and turkey are robust enough to satisfy a hungry man! Very easy an delicious!
