I really enjoyed this. Will be a regular in my house. I did leave out the chicken broth and served on soft tortilla, fajita style. yum!

update..I put the leftovers in the freezer...I took them to work and ate for lunch, still delicious!!

Great recipe! I made it tonight with chicken breasts. I served the chicken and onion/peppers combination on corn tortillas with sliced avocado and Baja Sauce. Will make again!

Hubby made a mistake and added two adobe peppers to the mix and woohoo! Feelin hot hot hot! But the flavor was so good that we just kept eating. And sweating. The taste was bold and zesty and authentic! We'll use this recipe forever.

very good! added almost entire can of adobo sauce and chilis with seeds to ramp up flavor and spice level. also added small amount of cornstarch to thicken sauce as it was too thin to serve with anything, especially a tortilla!. Also used cilantro instead of oregano. next time i will use one green and one red pepper and maybe some fresh jalapenos to enhance visual appeal and flavor. may also incorporate white meat chicken, as sauce should keep white chicken from being too dry. nice that one serving was actually two tortillas--so often portion size of taco/burrito/enchilada/wrap is only one tortilla's worth. we found a great lo-cal whole wheat tortilla that tasted great that probably netted the calories even lower (and if i use white chicken, should be lower yet.

Didn't really care for this recipe. The flavor was good, but the chicken was kind of mushy, and too wet! Not at all what I was looking for, and wouldn't make it again.

This is not what you think of as a typical fajita recipe. Notice that in the ingredients, it calls for tortillas, but in the directions it says its to be served with rice or potatoes. Trust me, unless you boil it way, way down or thicken the sauce, there is no way this will go onto a tortilla. Much, much to runny. As far as taste goes, it was okay, but it will definitely not become one of my favorites. Not spicy enough (I even doubled the chipotle nor flavorful enough.

Very tasty! I wish the chicken had more flavor, though. I think I enjoyed the veggies more than the chicken, but it was still very good!

Oh soo good! I added a beef steak tomato; very delicious and pretty. I also upped the chipotle peppers and it does give it nice little kick. Very easy to make and much healthier than the fajita packets, which tend to be overly salty. I used my cast iron skillet and got the oh-so-familar fajita sizzle, just like in the restaurants!!! Can't wait for the family to try them out when they come to visit.

There is no reason to ever buy those fajita mix packets again. This recipe is easy and it tastes fantastic. One problem I found, however, was I could not stop eating it was so good!!!! Great recipe.
I served it with rice, beans and guacamole.
