Very yummy! I have tried many fajita recipes and even the packets, but I feel like the chipotle in adobo REALLY makes a difference!! I cooked one chicken breast (instead of thighs and used roughly 1.5 chipotle peppers in the adobo sauce. It was so spicy and so delicious!! I also substituted cilantro for oregano because I didn't have any oregano on hand. It was seriously so tasty and easy to make. The hardest part was cutting up all the bell peppers, onion, and chicken. If you pre-cut all the veggies and meat the night before, you can have dinner ready in 10 minutes flat!

Aug/2010 current rating "Delicious"...I used extra chicken cutlets didn't have thights( leftover extra from last night uncooked but seasoned with salt and pper.I seasoned by sight using everything she called for but didn't have fresh oregano(used dried but less and it was Fantastic!!!1 Try this recipe Aida's way or improvised with what you have on hand It's Good, soooo Good!

This dish is FULL of flavor! Everyone loved it. I made it into quesidillas for the kids, fajitas for my husband, and on top of salad greens for myself!

The last instruction in the recipe says "Serve immediately over steamed rice or potatoes." However, this is a fajita recipe...I'd expect to serve it with tortillas, as the ingredients call for. I'm sure the recipe will be wonderful (I'm still preparing it but the editing by the Food Network staff leaves a lot to be desired.

I made this over the past weekend with my boyfriend and it was awesome. Prep was simple, instructions clear, and food yummy. I used chicken breast instead of the thighs, and I used two chipotle peppers instead of one. Using 2 gave the dish a real kick. Highly recommended.

I de-boned and took the skin off my own chicken thighs. I used about three pounds of chicken instead of one to make a little more. Because I used more chicken so I used an extra pepper per extra pound of chicken. I added double salt. I added a 1/4 cup extra low sodium chicken broth. It was quite spicy, but we liked it. Sour cream is very important and I wouldn't have liked them if I hadn't used sour cream.
