    Working moms, save this dinner for a weeknight! Fast, simple and delicious. This was a big hit for my husband and our neighbors who joined us for dinner. I put the chicken and peppers on top of brown rice.

    Made this last night. I'm not sure about the chicken thighs. I might try it with chicken breasts next time. My husband liked it.

    I made it the same day it aired. It was quick and easy and tasted really good. I used chicken breast instead of thighs. Keep the good recipes coming!!!! Thanks Aida.

    Because of bad weather, I was unable to grill chicken breasts outdoors and had to go to Plan B. After watching this episode, I wanted to try the Chipotle Fajitas. I didn't have fresh oregano or tortillas on hand, but did have left over white rice. Since I was pouring over rice, I used a whole can of low sodium chicken broth just to give a little more liquid to the dish. Also, since I added more broth, I added an additional minced garlic clove. Only other change was since this is a Tex-Mex dish, I couldn't resist adding some cumin....about 1/2 tsp. The flavor of the chicken coated with the minced chipotle was amazing. My husband loved this and we'll definitely make again....next time less broth and on tortillas and with fresh oregano. And, there was enough left-over chicken, onion & pepper mixture to freeze for another dinner for 2.

    This is the second chicken recipe I've tried from Aida., the first being the Chile Lime Roasted Chicken (excellent now this....I had mine with rice and a black bean salad. I'm very impressed with Aida so far. Did not take long and was tasty, did not have any thighs, so I did mine with chicken tenders....Thanks Aida

    Saw it on TV this morning and made it for dinner tonite. It was quick, easy and delicious. I used chicken tenders instead of chicken thighs and 1 cup of broth instead of a 1/2 cup. Using the extra broth made a nice gravy to pour over the chicken. I would definitely recommend this as a wonderful quick work week meal.

    Wow, Aida! I made this tonight for my husband, followed the recipe, except that I had very rare left over flank steak so I used that. These fajitas were sooooooo good! Rallies any excellent restaurant recipe that I have ever had! made some home made guacamole and we had a wonderful meal! I HIGHLY recommend this recipe! Thanks!
