This tastes like a real asian soup I grew up with. The flavors were bold and complex. I usually hate mushrooms but the shiitakes have a different texture. I'm sure it would still be fine without them. The pork was super tender and wasn't too tough when i heated up the leftovers the next day. It's great food for when you're sick or even hungover. The sesame oil was kind of smokey but it's optional so try it without first if you're not sure if you'll like it.

The great part about this was that the broth could be made ahead of time and kept on "hold", and then the dish can be finished in 5 minutes after dumping the pork and mushrooms. Good earthy flavor from the 'shrooms with the ginger, garlic and soy harmonizing nicely. The next time I make this I'll use 2 pounds of pork tenderloin since there was plenty of room in the pot. I'm also thinking of putting in some (plain ramen noodles as well.

Excellent soup! The flavors were perfect - Loved with pork, but might even try boneless, skinless chicken thighs next time to add even more richness.
