I'd like to add a few tips to this great recipe. First, let your bananas ripen until the they are evenly covered with *small* brown spots. That will ensure optimal natural sugar content. If they are green-tipped, they may have a bitter taste. Although some people think its a good idea to place the bananas in a freezer bag before freezing, this is actually a bad idea. Bananas lose moisture during freezing and the bag causes this moisture to crystallize on the bananas. Once dipped in chocolate, this frost melts into your chocolate and quickly ruins it. This was so good and so easy that my 4 year old son helped me roll the bananas in the chocolate and coconut. Plus the smell of the coconut toasting in the oven was heaven for my husband. They taste great too!!!!!
