I have made this recipe twice and both times the platter was licked clean! This is a little labor intensive, but worth it! note: you will need twice the chorizo it calls for.

These were voted best app. at the party. Very very delicious and great flavor with few ingredients. Would be perfect for a superbowl party.

I made these yesterday, really because I had some new potatoes that had to be eaten. We loved them! I didn't use the green onions, because I didn't have any. They turned out wonderful!

I had made another recipe with a very average chorizo and it tasted lousy. For this recipe I made sure I had a good quality Mexican chorizo. I served it as part of a Mexican dinner night and my son procalimed it among one of the best meals I had ever made, and it was all due to these potato skins.
Warning: Due to their compact bite size you can eat an entire tray before you know it. They're THAT good.

I was so excited to make these for Superbowl, I wanted to love them, but they fell short, I still had some left at the end. It might of been the chorizo sausage, just didn't love the flavor of them. I do love the idea, might just put bacon in them next time. Yea Steelers.
