Ingredients
- 1 pound ground pork or beef
- 1/2 cup dry breadcrumbs
- 1/4 cup minced red onion
- 1 large egg
- 1 teaspoon kosher salt
- 1 teaspoon mustard
- 1 teaspoon lemon zest
- 1 teaspoon Worchestershire sauce
- 1/2 teaspoon freshly ground black pepper
- 1 cup orange marmalade and 1/2 teaspoon red pepper flakes, for serving
Directions
Preheat oven to 400 degrees F. Combine all ingredients, except the marmalade and red pepper flakes, in a large bowl and mix until just combined. Moisten hands, gently form mixture into 1-inch meatballs (you should have about 25) and place on a baking sheet. (Meatballs can be made up through this step to 24 hours ahead and stored covered in the refrigerator; let come to room temperature 10 minutes before roasting.)
Bake until meatballs are warmed through and almost cooked, about 15 minutes. Meanwhile, stir together marmalade and red pepper flakes, and season with salt, as desired.
Remove meatballs from oven, toss with marmalade, return to oven and bake until the meatballs are completely cooked and the sauce is warmed through, about 5 more minutes. Skewer meatballs with toothpicks and serve.

While simple to prepare and worry free (I did them in the crock pot for a holiday gathering, the meatballs had too little "zing" for an appetizer bite.

I dont know why everyone keeps asking about tomatoes? No where does this recipe say anything about tomatoes.
This is a very easy, fast to be made recipe that taste's great. Have fun with it and make it your own - add something or omit something. Either way, its very good.

I am going to make this for Christmas Eve. But the recipe that I copied from the e-mail did say to bake the meatballs till completely cooked ,tomato and the sauce is warmed through. When I looked it up on the actual website there was no mention of tomato so I think the mixup came when the e-mail recipe was sent. Because I thought the same and read the recipe a few times and was confused. Can't wait to try them.
