Love this take on potato salad. That green sauce takes it over the TOP.

This was good, and the pesto was the best part. Only four stars because it wasn't quite as flavorful as expected. Had to go a little heavy on the salt. Still a good alternative to mayo based potato salad.

Excellent! I made this for a potluck with neighbors and it was a hit. I loved baking the potatoes instead of dealing with boiling, etc. The flavor combination made the flavors come together beautifully. Everyone loved the dish. They kept asking me what was in it. I will make this again for sure. Thanks Alex!

This is a flavorful rendition of non-mayo potato salad, although the recipe is slightly confusing. The bunches of herbs I buy are too large for this amount of oil, so I used personal judgment in deciding the amount to use. The recipe makes reference to both parsley/basil puree & herb oil. When I made the recipe, the substance created with the oil & herbs was more of a pesto (not separate puree & oil. I eyeballed it to determine the correct amount to mix with the potatoes. Since I was in a hurry, I cooked the potatoes in the microwave...They were fine. Due to my success, I do not feel the need to bake the potatoes next time.

This was really good, not sure how someone could find it fell flat with all those punchy flavors. I didn't have enough herbs to do the pesto, so i just chopped a handful of basil with some sprigs of parsley and only used 1 T of oil b/c I'm on WW. I loved this

I wanted to like this but it fell flat. It needed more flavor. Maybe some garlic? I won't be doing this again.

This was delicious and quick. I was in a hurry as usual so I cooked the potatoes in the microwave. Didn't peel any of them. It was such a tasty sophisticated dish. YUM

I love potato salads of all sorts, but this is spectacular. I made it right away and couldn't find the gherkins - used relish and it was great. I hadn't noted the amount of olive oil so my pesto was thick but it was fine when mixed in with the other ingedients. Second time around I used less parsley and more olive oil and it tasted better and was the right consistency. I eat it all before serving - so beware!

Made this tonight to go with steak on the grill and sauteed verts with bacon. The potato salad was very yummy! My husband isn't a potato salad fan, but this is different enough from the standard boiled potato, egg, mustard, and mayo salad that he had seconds.

Don't be intimidated by the number of ingredients..it is an easy recipe to make.

I did end up with a TON of pesto! Maybe my large bunch of parsley was larger than normal, but I could have easily halved the pesto part of the recipe. I only put half on the potatoes and reserved the other half, but there was enough on the salad that we didn't use any of the reserved pesto.

Baking the potatoes is genius! So much easier than boiling and much less clean up. I really liked the texture of the potatoes -firmer and not at all soggy.
