I also made this recipe and my filling also separated. I had the cookies made ahead of time so I didnt think I needed the refrigeration part. As soon as the choc/cheese mix was combined it started to separate. I want to know the secret to keep it from separating because the flavor is fantastic!
I thought maybe the white choco was still a bit too warm and made the cheese separate. But I am not sure that is the issue. I mixed it again and put it in the refrigerator. I did bring it back out again for over an hour and it didnt separate yet. I assume with the cheese in the mixture, I should keep the cookies in the refrigerator and bring them out to room temp before serving.
I made this cookie and one just like it from alice medrichs bittersweet book and this cookie was brittle on the edges and greasier. Alice's cookie presented much better.
I do wish they would give weights for the chocolate and I would try it again. A measurement cup of chocolate varies too much
Well, I love the tv show and will keep trying.

These cookies taste absolutely fabulous! The only reason I gave it four stars was because the white chocolate/cheese mixture separated after refrigeration. Not sure if I did something wrong, maybe the white chocolate wasn't carmelized enough, but they still tasted delicious! I also made a couple of changes due to ingredients on hand, such as subsituting the marscapone with cream cheese (which I have done successfully in many other recipies and used vanilla extract in place of the rum, although next time I will definitely use the rum.
