    I made this recipe tonight, and it was FABULOUS! So very velvety, and the taste is amazing! JELL-O and the store-bought brands have nothing on this pudding. I followed the directions exactly as written, and had no problems, especially with thickening..adding the cornstarch mixture after the chocolate mixture comes to a boil was key. I'm definitely adding this to my online recipe box! Thanks, Alex, for this great recipe!

    Just finished licking the pot...yum! Can't wait to serve this evening. I used Ghirardelli cocoa, it says ground chocolate and cocoa, so I was concerned it may not turn out, but it did! I also used non-fat milk and heavy cream, because that's what I had on hand. I added Kahlua instead of the Rum, just because I love Kahlua, it would be just fine without adding either one...one tsp. isn't going to make a huge difference. I don't plan on serving with the almonds, just whipping cream. Anyway, I love the pudding! Thanks Alex for a great "go to" recipe...it's a keeper! PS...as far as the thickening, I did what the "packaged pudding" says, I brought it to a light boil and it thickened right up!

    Wonderful pudding. I made it with skim milk and heavy cream. I absolutely had NO problem with thickening--as soon as I stirred in the cornstarch, it was thick. I cooked it on low for three minutes just to make sure. I did not use the almonds or the rum. Otherwise I was spot on. Easy to make and delicious.

    I will never be able to eat Jello pudding after having tasted this one. It is smooth, rich, creamy, chocolatey, yet not heavy nor too sweet or intense. The whipped cream and almonds add a really nice touch. I halved the recipe and followed it basically to a T-I used regular rum instead of dark and a bit less oil for the almonds, and it turned out perfectly. I love watching Alex's show, and even though sometimes her recipes can get complicated, this one was totally worth it.

    In regards to not thickening: My first time making this pudding it did not thicken either. I tried it again today and this time after adding the cornstarch/milk mixture I turned up the heat to almost medium and kept watching and whisking every so often until it came to a full boil. I can't say how long it took but it was definitely more than 5 minutes. Then I turned down the heat to low and continued whisking for 3 minutes. It came to a nice thickened consistency. I took it off the flame and added my rum and vanilla. I just sampled it and it's delicious. Can't wait to try it tonite with the whipped cream and almonds. Hope this helps!

    Really, really wanted to try this recipe. For the life of me it would not thicken. I ended up using 6 Tblsp of corn starch and still no thickening. I'm wondering if cornstarch can lose it's ability to thicken even if the product is not expired. Anybody know out there?
