    I have never had eggplant parmigiana before (and actually I have never been a fan of eggplant, but after seeing this on the show, I had to try it. I am so glad I did! Absolutely delicious and fairly easy to make. I halved the recipe (one eggplant and used an oval shaped 2 quart casserole dish. I skipped a step and used a jar of "four cheese" sauce. To which I added a can of whole tomatoes and sauteed onion and garlic. I heated the sauce while the eggplant was frying and it was all ready to assemble at the same time. Sweating the eggplant was an important step, as the eggplant was not bitter at all. Thanks, Alex for changing my opinion about eggplant!

    Patrish Bergamo, This was a very wonderful dish, I serve to guests and they all wanted the recipe. The only change I did was to put the eggplant in two layers and I stacked the eggplant on top of each other so it was very handy for serving, each guest received one stack, I served a salad and it was sufficient for 10 servings.

    Made this for Sunday supper, EXCELLENT! Followed the recipe exactly my husband was drooling while I was frying the eggplant and couldn't wait for the finished dish! I am not a big eggplant parm lover but my husband begged for me to make this and I am glad he did because this was AWESOME! You will not be disappointed!

    I saw this on TV and thought I'd give it a try. Followed the recipe to a tee and just before eating I seriously thought I'd be disappointed based on the sum of it's parts. I was very pleasantly surprised, it was sooo good!! I'll definitely make it again!

    I hit a home run with this one! I didn't use your tomato sauce recipe, I had leftover sauce from an old Italian recipe that I used, I'll try yours next time! Followed the rest of your recipe to a tee, the first time I've made anything with eggplant that's truly worth repeating! Loved it! Thank you!
