Warning this recipe will destroy your diet. It is good. Try it with Emirl's Italian Bread recipe. I made it with my kids. They had fun, learned how to make butter. I have not tried it baking as I do not know the fat content. Man going back to smartbalance is going to be tough.

Though I have been baking for many years this is the first time I have made butter. I searched for the recipe after seeing her make this on Iron Chef recently. The butter is good and so much fun to do.
Glad I read the reviews and in addition to the collar found draping the cheesecloth over the mixer contained the free flying liquid very nicely. Made a batch of honey butter, very nice.

This is such a great tasting butter, so clean and fresh. It reminds me of my own grandmother, sitting on the porch in her rocking chair with a small jar of fresh milk, shaking it until the butter formed. You could see how natural it was for her to be doing it, sort of absentmindedly shaking the jar while she talked. It was something she did often. I hope everyone will give this a try and thank you Alex for sharing with us something that our ancestors did all the time.

Wow! This is the second time I've made this recipe! It is so easy. Thank you very much Alex. My husband grew up on a farm and they made butter from whole milk by churn. He said that this butter was what he remembers. The first batch I did not watch and my kitchen took a buttermilk bath but the second batch I watched carefully and I have much more buttermilk. I used Daisy whole milk sour cream. Have you ever used Light sour cream?

I am going to try this later but to Lisa consider the buttermilk pie recipe here. It is going to be the first thing I try as I haven't had it with real buttermilk in a long time. The rating is preemptive but really is there any question?

Thanks, Alex. The butter was so yummy and creamy. My excitement at making butter amused my 83 year old mother who made butter the old fashioned way with the churn, growing up on the farm in Indianapolis. I put the ingredients in the food processor and it made butter in a flash. I used Trader Joe's brand of gaur gum-free sour cream. Using the mixer was a slooooow process. I didn't know what to do with the leftover whey though so it seemed a waste to pour it out. Lisa in Indianapolis

Have been waiting to try this for a week or so. WOW... there was nothing to it! I didn't have any trouble with it going anywhere. Poured everything into the cheesecloth over the strainer, let it sit for a minute. Squeezed the excess milk out and there was this perfect butter! Doesn't Alex just ROCK! I'm afraid I'm not going to buy butter again either. p.s. Live in Northern Calif. Used Knudsen sour cream.

I saw the end of the show when she talked about the homemade butter. That sounded interesting. I pulled up the recipe and read the reviews. It IS messy, you want to use a collar on the mixer or plastic wrap but it is amazing. Daisy and Breakstone only have sour cream. (Cabot said all natural too but had the additives - just check the label. My first Alex recipe, definitely not my last. This is incredibly easy and delicious. Thanks Alex!

I haven't made this yet, but plan to this weekend. As to turquoisecat_12403067 question. Daisy Brand sour cream is all natural and does not have quar gum in it. In fact, it has no other added ingredients you can't pronounce that I recall.

I agree with niblet1 TJ's is great (for almost everything however if you don't have a Trader Joe's near you I found Knudsen 100% Natural SC in my local Smith's (Kroger store that didn't have the guar gum in it.
