Live or on TV...Julia Child taught how to make French style egg omlettes. Triple layers and fresh herbs...produced an omlette that had plate appearance as other dishes (e.g. mexican burrito or asian lettuce wrapped / rice paper wrapped items vs. egg omlettes that are stirred almost like scrambled eggs. Bottom line...my opinion...this recipe produces a great flavored mix of ingredients and prepared in described style. It's terrific that we can watch a variety of TV demos, same ingredients YET produce various textures and final appearance per techniques used.
