    Also had these at Butter and they were divine! So light and fluffy and the sauce was delicious.

    Anyone know if you can make the dough in advance?

    WOW!!!! These beignets are awsome indeed, I made some for the first time from another chefs recipe, and I was so sure I had found the one they were very good and looked just like the picture. Then I saw Alex's recipe and I had to try it, and boy am I glad that I did that. These beignets puff up just like dounuts and they are soft yet chewy, I used several diferent fillings, and all were good I also used a glaze of powdered sugar and vanilla and they were delicious. The main thing is you could eat them plain and they are delicious also. Thank you Alex, OUTSTANDING......
