How would I create this recipe over the stovetop instead of the microwave?

this recipe was fast and easy. My son, who is 3, helped me with it and did not loose interest 1/2 way thru like he always does in "helping" me cook, because it was FAST and YUMMY!
Big fan of Alton Brown, and again this recipe was a great success as always :

Will never buy apple sauce from a jar again. Substitute with maple syrup - the kids will love it!

Incredibly easy, and doesn't even require a food processor. Don't buy applesauce ever - just use this recipe.

I expected a bit more from this recipe. I will try again with a different group of apples, but the texture was not remarkable differnt from commercial applesauce. High quality cinanamon is a must. I used the brandy, but could not detect it in the finished produce. A good use for apple surplus.
