    Just made the chili powder. Open the windows and turn on the fans! Don't be afraid to modify according to your tastes! Recipes are just a guideline! It smells delicious. Going to use it in Guy Fieri's Dragon Fire Chili, which I have made a few times and is delicious!! Btw, Alton uses the exact chiles in the video that he references.

    Love this recipe. A friend made it and gave it to me as a gift as I moved to a location where you cannot get great southwestern food. I blew through that entire jar within a matter of a month. McCormick's, Spice Hunter, and whatever brand name is on the market in the midwest = BLAH. You name it, I've purchased it. All boring and bland. I could only beg friends on the west coast to send me chili powder prior to finding this. Now I'm going to make my own. Thanks Alton!

    I swear most people who rate these recipes never actually make the recipe as published. I do and this isn't anything special. I'd give the edge to McCormicks chili powder compared side by side. But I have a lot of peppers and the rest to use up now for Christmas gifts. I shouldn't have been so trusting.

    Alton must be losing it. On his show he stresses using weight for measuring pretty much everything. This recipe defies his mantra. Ancho chilis vary a lot in size, so this 3 each business leaves a lot of flexibility which I find annoying.

    I have been thinking about making this chili powder for a year or two. I finally made it yesterday, along with a small pot of chili. We liked it. It added a nice, smokey, earthy flavor to the chili. I am glad I made it and will do again. I used 1.5 tablespoons in a smaller batch, 1 pound ground beef along with other seasonings, it seemed like enough.

    I made a double batch of this last weekend and have more chili's on the way. A friend took one smell of this out of my jar and stole 4 TB of it to make a batch of chili. I'm going to have to hide it from now on.

    I absolutely love this recipe. I will never again buy chili powder from the store. This is a perfect mild chili powder. I have been experimenting with different chili's to get different heat levels. Today im going to follow Alton's recipe but im going to add a Naga Morich (Serpent Chili as well for some serious heat.

    Whenever I need to "punch up" a recipe or add a new depth and layer of flavor, I sprinkle a little of this, and the flavors pop. Potato salads in summer, stews and casseroles in winter -- it ain't just for chili anymore!

    Yup, this is the episode that changed my life. The amount of difference between this recipe and store-bought chili powder really can't be overstated.
