    I used this recipe for my chili. I entered it into our church "Chili cook off" and won. The chili powder added such a wonderful flavor that everybody commented on it.
    AB's recipes are always winners.

    The wife and I made a batch of this the other night. We did not have major odor issues during heating of chilies and cumin. And, we weren't sure how long to heat them as we were waiting for more punch from the pan. We heated for probably 7 or 8 minutes. Everything seems like it worked. After blending I did a smell test of this chili powder vs. our store bought chili powder. Let's just say the store bought powder rests comfortably in the bottom of our trash can (we did keep the container to fill with the "good" stuff. So far I've only eaten it on popcorn and it is great. Once our North Dakota winter starts this chili powder will help keep us warm until spring. Oh yah, you betcha!

    "Matt I,ve used this recipe a number of times and I've noticed in searching for the three types of chili peppers that Guajillo chilies and Cascabel are the same peppers with two names.So when I make this recipe I use 3 Guajillo (Cascabel (mild heat 3 Ancho (medium heat and 3 Arbol (hot heat which turns out to be an excellent chili powder.Hope this helped.

    I've made chili for years, and it seemed no matter how I tweaked the recipe, it always tasted the same. Until I used Alton's chili powder recipe. What a difference! The toasting of the cumin really makes this! Fortunately, I live in a Latin neighborhood, and can get the ALL ingredients at my corner store! Cheaply! Last night I Made a double batch for $6.75!

    Alton's Chili Powder hits all the right notes. I've given the chili made with this recipe for powder away; it was so good I have to share it. I was able to find cascobel chilis at Horrock's in Lansing, MI. I do like it hotter, and smokier, so I add the chipotles. The method is easy, but be sure to stir the toasting chilis and cumin seeds. Never overheat, since it will scorch before you know it. Fans and open windows are recommended. All this for a result that you will never forget. The aromas, flavor complexity and layers, and amazing culinary authenticity all show this assist to great cooking well worth the tiny effort. I've even had friends in for chili powder making and socializing!!

    You can find all the chili's at www.wholespice.com . This chili powder is also great on ribs. I keep it in a zip top bag and it keeps well for a few months.

    Easy and really good. For Cascabels, here in SoCal you can find them at Smart and Final Plus....

    If I am ever having problems acquiring an herb, spice, or pepper, i.e. Cascabel, at my local Mega-Mart, I can always get them at Penzey's.

    I've never had much use for chili powder until I saw this recipe! The flavor is excellent, but it does go stale after a few weeks.
