    I have made several batches of Alton's chile powder, but have never found the Cascabel chile's,(even though I live in Arizona. I have substituted a variety of chile's and they have all turned out excellent! I don't always toast the chile's and they have turned out great anyway. I use it frequently in Paula Deen's "slow cooker pinto beans" and it gives it a great flavor. If you're not a big fan of heat, use alot more of the pasilla chile's or new mexico chile's instead of the little ones packed with "dynamite". I don't always write reviews about the recipe's that I try on Food Network, but this one is definitely worth writing about. I wish Alton would dedicate a whole show just for making homemade spice mixes.

    . . . and is like the giant difference between Kraft Parmesan Cheese and freshly grated imported Parmesiano/Reggiano!

    Plus it only took me 20 minutes to make, too easy!

    If you can find the chilies, I highly recommend this recipe for your chili powder. It is infinitely better than store bought junk.

    This chili powder is really good. Well worth the time to make. Or maybe I should say the time to shop - it took me a while to find the Cascabel chiles, but it was well worth it. Enjoy!

    This is much better than anything you can buy. It's pretty easy, and you don't have to use the exact peppers (I can never find cascabel as long as you use hot, medium, & mild.

    Could be spicier for my tastes, but there's no denying the excellent flavor. The combination of all the different chiles, mixed with more traditional flavors really balances it out well. I added some jalapenos to the finished product, definately try it!

    Found myself without chili powder while making vegetarian chili today, and I remembered seeing AB make his own recently. I happened to have some dried guajillo and ancho chilies on hand, so I used 4 of each with fabulous results. I only had regular paprika, so I can't imagine how good this combination is using the smoked variety and the recommended chilies! I'll definitely be using this recipe from now on for chili powder - thanks AB!
