    Great recipe and by far the best wings I have made yet! I quit deep frying wings several years back due to health reasons and have been either grilling or baking them instead. Par-steaming them is a great idea! And to my fellow Buffalonians that don't agree, get real.

    These wings are a great change of pace for a healthier version of wings. No frying makes for a less greasy feeling in the stomach. The cooling for an hour in the fridge helps to dehydrate the skin, helping in crispiness.

    Also, if you haven't actually tried a recipe, does it make any sense at all to be judging it? If you can't think of how the recipe would work, you should at least "THINK" about keeping your yap shut.

    So my boyfriend wanted hot wings for the Super Bowl. So I came directly to this site hoping to find something easy to make because I've never made hot wings before (I don't eat them. When I saw the recipe and the review I knew this was the recipe I was going to use. I'm making them now so I will let you know later what my boyfriend said about them. *side note* I bought some hot Buffalo Wing Sauce.

    Close to Buffalo wings but Buffalo wings are not baked. They are deep-fried only.

    Well, he did get the sauce pretty well right but a true Buffalo wing is NOT steamed or baked. They're deep fried.

    I just finished making and eating these wings, to make sure they were good enough for the big game tomorrow. First I was confused if you were suppose to keep on the rack while baking or lay down on the parchment paper? I left on the rack and some stuck.
    Anyway my hubby thought they were the best wings ever! I normally never eat hot wings as I do not like fat or skin on anything. But Wow, the skin tasted as good as the meat. There was not one speck of fat left. Just really crispy tasty skin and meat. I could only find the Krogers 4lb bag of frozen wings today, and I warn you that when done these wings are only about 1.5 inches long and very small. This will now be my Hot Wing recipe. No more frozen buffalo wings when just a little effort makes such a crispy wing.

    Let me say that my husband is a wing expert!! He likes them a certain way and is often disappointed when we go out for wings...Lucky for me we don't have to go out for wings ANYMORE!!EVER!! These are the wing be all..end all, the alpha omega, the A-Z! He loved them! We like them a little hotter and added about a tablespoon of Death Sauce and incrased the hot sauce(we used Franks to 1/2 cup and added another clove of garlic..but kept the butter the same. We cooked the wings for an additional 10 min..Sheer wing perfection! Alton...you are the wing GOD!! Thank you!

    Can't get them any better! Rather have oven roasted instead of deep fat frying. Can hardly wait until Super Bowl. They're a rave in my household.
