Maybe I'm not doing it right, but I've never been able to get the skin nice and crispy. Even after steaming, there's always some fat left on the chicken or in the skin that melts when the wings are in the oven. The bottom of the wing sits in this liquid the whole time they're cooking, keeping the skin moist and soggy.

I suggest keeping his authentic buffalo sauce recipe, and opting to deep fry the wings. Perfect combination for texture and flavor, just like your favorite wings at your favorite bar.

Delicious and Easy! These tasted like restaurant wings without all the frying. Didn't have parchment paper on hand and simply roasted them on a pan sprayed with Pam. Worked just as well.

I loved it. I didn't add garlic or butter to the sauce, but it was still really good and all my kids (28 years old to 38 years old loved it because it didn't have butter.

I have forwarded this recipe for all of 8 of them.

Thank you Alton. I always can depend on your recipes.

    Best regards,

    Affi

Awesome! One of my husband's favorite recipes. He doesn't want to go out for wings anymore...it's home-cooked wings for us. And they're really not that hard. They just take a little bit of extra time, but they're so worth it. Do yourself a favor. Try these. You won't be disappointed.

libethromero: We used just the bottled wing sauce for the hot sauce. There will most likely be a large selection of sauces specifically for wings, so try a few. We sampled a few the first time and picked our favorite.

Double the recipe and watch it disappear at this house. We added more hot sauce and are planning more for the Super Bowl. A new tradition.
