This recipe is way better than frying! The skin gets crispy without leaving a greasy mess underneath. We used our favorite bbq sauce in stead of making the buffalo sauce, yum! (if you use a vinegar based sauce like tobasco it may taste like vinegar I will never pay someone else to prep wings again!

WOW!! What a great recipe. First time making wings at home and did not want fried wings. These were fabulous. My husband and our neighbot raved about them. Made 16 for the 3 of us - wecould have easily eaten 16 each. I used Tabasco Buffalo Sauce - it was very good, but could have been hotter. Might try adding some regular Tabasco or some habenero to heat things up. I'll use less butter next time, but I won't omit it.

I used Alton's method for preparing the wings, but used my 11-year-old son's homemade sauce. They were just wonderful. Crispy skin, moist wings. What a great way to prepare them without frying or grilling them outside.

Great wings, texture is awesome, flavor great as well. We did thighs, too, they probably need to steam a little bit longer. It is time consuming but not time intensive, easy to make during the pregame shows without missing any of the program.

Doubled the batch size for a Sunday football party and had no leftovers! Very tasty and relatively easy to make. I used barbecue sauce (Guy Fieri's on half of the batch and Frank's hot sauce for the recipe Alton outlines; both were good. Next time I'll follow the advice of other reviewers who baked the wings for a few more minutes after coating in sauce for exra crispy skin.

I made this exactly as the recipe states and the wings themselves were fantastic but the sauce wasn't my favorite. I made them a second time and followed the advice of several commenters who just used Frank's Hot Sauce on the wings- amazing. Loved them. Can't imagine ever ordering wings from my usual delivery place again when these are so good and, with a little prep time, so easy to make.

the chicken was crispy but the sauce did not have much flavor. We live in a hot area so we used the grill instead of the oven. I will try again but I think I will use the sauce to baste the chicken rather than just pouring over the chicken.

I made these with little hope they would be as good as our local place. Now, I would rather make these, mess and all, than eat restaurant wings. These are perfect, delicious and just as good warmed up later. You can't say that about fried wings.
I even desire them, I think of them and I always have a bag of wings in my freezer. They're really good. Crispy and finger-lickin'.
