Originally from Buffalo area. Nothing can beat Bar Bill's wings but Alton's cooking process is great for a baked wing. Of course I added a bit more butter & Frank's Hot sauce. I also microplaned 2 med garlic cloves and let sauce sit for 1+ hr to let flavors meld. After tossing in sauce...put wings back on rack and let sit in 200 degree oven for about 20 minutes to let sauce sink in and crisp up some more. Making plenty for Super Bowl party!

Excellent, I did leave the wings under the broiler for 3 min. for a crispier skin.

made these last year for superbowl and everyone felt healthy, laugh, that they were cooked in the oven and not fried. All disappeared, very good.

Best wings I've ever made. My husband said WOW after every bite. I've made duck using Alton Brown's steam/bake method that came out perfectly crispy, so I had an idea that the same method for chicken wings would work well too. This will be a regular meal in my house from now on.

Wow, excellent wings! My whole family devoured them! Anyone else have trouble with the paper towel sticking to the chicken after it was chilled? I am planning to make 100 of these for a party and would like for that not to happen.
Thanks Alton for an healthier and easier version of the buffalo wing.
