I haven't ever made angel food cake before, but I did today! I didn't get to see the episode (which I like to do before attempting and it STILL turned out great! I did lemon extract instead of orange and it was *TASTY* It was a fluffy yummy cake!

I've made Angel Food Cakes for years with extra farm eggs and thought they were great. After watching Alton and really understanding the science behind the AFC WOW is all I can say.
The technique is where it's at.
Thanks Alton for helping us understand the whys of food and cooking them.

I was a little scared about making an Angel Food cake from scratch but couldn't bring myself to make one from a box. This cake is so easy to make and so good - I'll never resort to the box again!

I got a new stand mixer, and have tried several angel food cake recipes so far, however, this one was the BEST yet. It was so tall, light, and fluffy! Delicious! I served it with strawberries macerated in Grand Marnier and sugar, and whipped cream...yum.

Though the recipe says you can use extract of your choice in place of orange, I wouldn't recommend lemon. The acid cooks the eggs.

    Just a thought.

The cake turned out very well, not even any trouble getting it out of the pan. I even got a request to make it for a birthday! Maybe I'll try adding cocoa next time.
