I followed Alton's recipe to the letter but ran into a problem. I was never able to achieve those "medium peaks" he spoke of. After beating the egg whites, cream of tartar, water, and flavoring for almost 45 minutes, I still had no real peaks. I opted to put it all together anyway, even though this made the folding of the dry ingredients into the egg white mixture a lot less easy than Alton made it look on television. Still, I persevered. Well, let me tell you that I was DEFINITELY rewarded for my efforts! The cake came out absolutely perfect! It was light, fragrant, delicious, and even came out of the pan much easier than I thought it would. Thanks, Alton, for another "keeper."

I followed this recipe step by step, the cake looked awesome in the oven (I was glad my son was home to wittness itwithin moments of removing the cake it collapsed and instead of the light airy cake that it appeared to be in the oven, it ended up like a chewy heavy sponge cake! What could I have done wrong? Could it be that I used organic cane sugar? Was the flour not folded in enough? Any recommendations would be appreciated. I will try again.

This recipe is the best that I have ever tried. I have not found any other recipe that meets the great taste, texture, and ease of this recipe. I recommend this to any one who loves angel food cake. It is also extremely better tasting than the boxes cakes.

LOVED THIS CAKE. Have been on an "Angel Food Cake Kick" tired of buy from the store. Have had a tube pan and never used it - until now. This is so tastey! The whole cake was gone in one day!

Alton continues bringing it hit after hit. It was light, delicious and very airy. I used vanilla extract in lieu of the orange and could not have hoped for a better turn out.

Is it possible that something is missing from this recipe? Maybe its the high humidity today in New York, but this angel did not fly. Like a brick. Any thoughts out there, or words of advice? Sorry, Alton.

This was the best angel food cake I've ever tasted! Of course it's not quite as easy as the "just add water" box mix, but well-worth the extra effort. Will make again and again (and again!
