    I really liked the macaroni, it was much better the first time I made it, than the second time, when I tried to make it again, not sure why.. o well still good!!!

    You will never want to touch another box of yucky mac and cheese after having this. This is the only way Mac and Cheese should be made.. terribly delicious!

    The process was easy and the ingredients were things I already had on hand, which is a HUGE help. I made this for 3 adults and 1 not-so-picky child and we all thought it was pretty good. 1 adult would have liked it to be creamier, 1 adult would like to have had no onions, but those are just personal preferences. My 7 year old thought it "tasted funny", but I think that's because I normally don't put mustard in my homemade mac and cheese. All in all, it was good, but I'm not sure they'd want me to make it again. I liked it a lot and would make it again for myself.

    I hosted Easter this year (my first large family gathering and had a pasta party. This mac and cheese was the biggest hit of all my items. I have had 3 requests for the recipe since. I did read the reviews first and made sure to go light on the onion and heavy on the cheese... I'm happy I did both.

    I made this, substituting a mixture of cheeses, as well as modifying the abount of onion in the dish - and it was fantastic.

    My family LOVES macaroni and cheese so I always make a double batch; the same is true with this recipe. But, no one finished the first serving. It was dense not creamy and the flavor was 'off' almost - sour (spoiled, rancid tasting.

    I LOVE Alton Brown's recipes; so much so that I have our satellite DVR scheduled to record every episode and my husband claims he will dye his hair blonde and start sporting glasses! This recipe is the only 'stinker' - sorry Alton!
