    These are our new favorite. I used 1 Lb each of pork and beef (no lamb, a whole small box of spinach, and Italian bread crumbs. I divided the mix into 20 balls, and put them into 2 9"x13" pans (there was no spillover. Be sure to check with a meat thermometer to cook to the temps on the meat packages. Thanks to Alton for a tasty meal!

    These were the best meatballs I've ever made, and I've made some pretty good ones. Instead of the mini-muffin tins I baked them on a rack set over a jelly roll pan, and it worked like a charm. My husband said he liked them because the crust allowed more sauce to adhere to the mushroom. The crust also did a great job hiding the bits of spinach from my 7-year-old until my sister-in-law asked him if he had seen the spinach. Even though he had been eating them like popcorn, the revelation put a halt to his consumption. I'll make them again, though when she isn't here for dinner. The only change I'll make is to halve the red pepper flakes. I like hot but don't think meatballs should be that hot. Thanks Alton. Love you as always.

    This receipe is so easy and the results are fantastic. The use of a mini muffin pan to bake the meatballs is genius. They come out perfect everytime and the excess fat drips off into the cups. These are the best meatballs ever! Thanks Alton!!!

    My guests were a little gun shy to try these meatballs because of the spinach. But one bite had them hooked and they kept coming back for more.

    These are also excellent with spaghetti sauce and linquine.

    This recipe blew them away! Alton is amazing! I watched this episode and thought he was nutz, "baked meatballs?
    No, no that's not how the Italians do it. They fry them and then put them in a pot of sauce...all day... don't they?"
    Now I ask you, how can anyone improve a rolled up ball of meat? Listen to Alton, that's how. He is a genius and so very entertaining and Funny!

    I found the receipe easy and delicious. I have made several variations, like one I left out the spinach and added grated onions, and am always playing with the basic ingredents. I also like using Panko bread crumbs for the final roll in the crumbs.

    I only had ground beef on hand but they still turned out wonderfully moist and flavorful! My tip: a great way to get water out of thawed spinach is just to squeeze it with your (clean hands. I put a precautionary sheet pan under the muffin pan (hint from other reviewers - but didn't have a problem with overflow. I cooked them for exactly 20 min. and they were great. However, when I tried to keep them warm in a low oven they did dry out. Will definitely make again.
