    any ideas on how to make this sauce without cheese or another type of sauce to use?? this recipe looks so delicious but I'm not a cheese fan!!

    This is my favorite fish recipe for a break from fried fish. Since I'm from the South I had to adapt it just a little. First I use catfish fillets instead of flounder; it's just cheaper and easier to find. Second and more importantly cook 2 or 3 pieces of bacon to add to the spinach stuffing as well as some cajun seasoning. It really wakes the dish up and is a great compliment for the cheese sauce. The prep time for this dish is more extensive than I like for day to day... so do yourself a favor and make the rice and stuffing the day before.

    Nothing new or unusual about fish prepared with a cheese sauce. I'd never made such a dish, as I thought it was beyond my skill level.

    Bur leave it to Chef Brown to show just how easy it can be. As others have already said, not only was it very easy to make, but several people I served it to, including my wife, really loved it, even though flounder is not something they would have asked for. Converts were made with that meal!

    As others did, I also used a sharp cheddar and it worked well for me. Although I normally like to tweak a recipe, this one did not need it.

    I'm keeping this one for future use.

    My husband saw this recipe on Good Eats and wanted to try it. Our supermarket did not have flounder, so we did it with tilapia. We used brown rice. It was delicious! And our kids, 4 and 6 years old, DEVOURED it! Even after the 4 year old said, "Yuck! I hate fish!". Way to go Alton! Our family thanks you!

    I saw Alton make this on Good Eats and wanted to try it. I went to my grocery store and couldn't find flounder so I thought I would change this recipe a little and make it with boneless skinless chicken breast that I pounded flat. It was FABULOUS! I am not a big fan of fish but after trying this recipe, even with chicken, I realized that the stuffing would taste great with any fish! The lemon zest really pops in the stuffing and the cheese sauce is excellent with the rice! I recommend using a sharp cheddar because medium cheddar was a little too bland for my taste buds. I also added a little squeeze of the lemon after I zested it to add some more lemon flavor because to me you can never have too much lemon! I deffinately recommend doing that if you are making this recipe with fish!

    I have a few friends that when we get together we cook up a storm, but two of them absolutely hate fish. We'll I decided to stir up this dish after watching Alton on TV. To my surprise they actually tried it, bc they love rice and cheese, and let me tell you they fell in love with it. There was left overs and I called my friend to tell him I was coming over to finish it up and he told me "tuff luck" my wife already ate it all, LOL!!!!

    This is a great one dish meal straight from the oven! The flounder I had was too thick to roll so I put the rice on the bottom of a large baking pan, layered spinach mixture, flounder fillets, poured the cheese sauce over and baked.
    It was supper easy and looked great when plated. Every dish left the table empty!

    This recipe wasn't what I thought. I agree that fish and cheese definitely doesn't mix. I cooked the rice separately and the rice and cheese actually was pretty good but the flounder and spinach I didn't like so much. If you like bake fish you will love this recipe however I definitely would spice it up a little bit.

    This recipe turned out really well. I'd never made my own cream sauce before but it was all very easy.
    I don't think that I will use so much lemon zest next time. It was a little TOO zesty, but very delicious overall.
